The three numbers that matter
Weight
3 g per 200 ml. A heaped spoon is a guess; a scale is not.
Heat
Green at 75 °C, oolong at 90 °C, black at boiling. Too hot turns leaves bitter.
Time
Steep, taste, then decide. Most leaves are good for three infusions.
